This hand-hammered iron Peking wok from Yamada Kogyosho is built for professional-use Chinese cooking. Hammering the iron thousands of times refines its structure so it conducts heat efficiently and stands up to hard, repeated use.
The hammering also leaves fine surface unevenness that helps oil spread and cling to the pan during cooking.
Before first use, dry-heat the empty wok to burn off the rust-preventive coating, then season it with oil. Minor scratches or surface unevenness from the manufacturing process may be present on this wok; this does not affect its quality or performance.
This wok is offered in iron thicknesses of 1.2 mm and 1.6 mm, and in sizes ranging from 27 cm to 45 cm.
