Fuji Cutlery MV Color Santoku Knife Black 170mm CR-0811BK

This is a Santoku all-purpose knife from Fuji Cutlery's MV Color series, a long-selling line that has been used for many years in school lunch centers, bento box factories, and deep-fried food specialty shops across Japan. It has an overall length of 305 mm (12 in) and a blade length of 170 mm (6.7 in), with a weight of about 130 g (4.6 oz).

This knife comes with a black handle, one of six handle colors offered in the series so a kitchen can assign a different color to each type of food for HACCP-compatible sanitary management. The handle is made of slip-resistant thermoplastic elastomer resin.

The blade and handle are joined using insert molding, a process that fuses metal and resin into one piece with no gap between them, keeping out water more reliably than knives held together with rivets.

The blade is made of high-quality molybdenum vanadium steel, chosen for its resistance to rust and chipping along with long-lasting sharpness, and the knife is made in Japan to meet the demanding standards of commercial food preparation.
