Koyanagi Sangyo Marusan Hagoita Kiriboshi Daikon Shredder Board G-0284

This paddle-shaped shredder from Koyanagi Sangyo, a maker based in Tsubame-Sanjo, Niigata that has combined wood and metal since its founding in 1926, is designed for cutting daikon radish into thin strips for kiriboshi daikon (dried shredded daikon). The handle is shaped like a hagoita paddle, which makes it comfortable and secure to hold while you work.

The julienne blade is sized to cut strips with enough thickness to give the dried daikon a good bite and natural sweetness once it has been dried in the sun. Simply push the daikon across the blade, then lay the strips out to dry.

The body is natural magnolia wood with a stainless steel blade. It should not be washed in a dishwasher. The shredder measures about 35.8 x 34.6 x 14.4 cm (14.1 x 13.6 x 5.7 in) and weighs about 195 g (6.9 oz). It is made in Japan.
