This all-stainless santoku knife from Kyoto Katsugu has a thin blade ground for a clean release from food and an easy-to-clean finish. It is made of specialty stainless steel, which gives it high hardness, good resistance to rust, and enough flexibility to stay easy to work with.
The double-beveled edge is finished with a hamaguri (clam-shell) profile, carefully honed to reduce resistance as it passes through ingredients for a smoother cut. As a santoku, it is built as an everyday, general-purpose kitchen knife. Measures 30.5 x 16 x 4.3 cm (12 x 6.3 x 1.7 in). Made in Japan.
