This slicer from Shimomura Kogyo's Pro Grade line is designed for slicing vegetables and shredding cabbage, with its blade angled for left-handed use. A standard slicer has a blade that angles up to the right, but this left-handed version reverses that angle so the blade tilts up to the left, letting left-handed cooks move food back and forth naturally.
The blade is sharpened by craftsmen in Tsubame-Sanjo, one of Japan's leading cutlery-making regions, for a sharp edge that cuts through food with little resistance and light effort. A resin holder is included to guard your hand from the blade as you work, so you can use the slicer safely right down to the last small piece of food.
It slices to a thickness of about 1.5 mm (0.1 in), is dishwasher safe, and is made in Japan. It measures 28 x 9 x 2 cm (11 x 3.5 x 0.8 in) and weighs 82 g (2.9 oz / 0.18 lb).
