Tanabe Kanagu Pure Copper Vegetable Color Keeper for Edamame 2495

This pure copper cooking aid helps edamame and other vegetables keep a bright color when boiled. Place it in the water, and the small amount of copper ions released helps boiled vegetables and wild greens come out with a vivid color.

It gives a similar effect to boiling in a copper pot while using aluminum, enamel or stainless steel pots.

You can also put it in a pickling container to help pickles keep their color. For pickled eggplant, it lets you reduce the alum that can cause bitterness, bringing out the natural flavor of the eggplant. Made in Japan.
