Wahei Freiz Pure Copper Pickle Color Keeper for Tsukemono

This pure copper color keeper from Wahei Freiz is used when making Japanese pickles or blanching vegetables. Simply place it in the pickling container along with the vegetables.

The copper ions help bring out the vegetables' natural color and flavor as they pickle. The same color effect works when boiling green vegetables such as edamame, giving them a brighter color as they cook. When used with eggplant pickles, it can reduce the amount of alum needed, which is the usual cause of bitterness in eggplant pickles.

The piece measures about 8 x 4 x 0.1 cm (3.1 x 1.6 x 0 in) and weighs about 14 g (0.5 oz / 0.03 lb).
