This ProGrade julienne slicer from Shimomura Kogyo is well suited to shaving burdock root and preparing kinpira dishes. It cuts strips about 4 mm (0.2 in) wide.
The blade edges are finished by etching, a process that dissolves the tip of the blade to make it sharp, so you can julienne with light pressure.
The curved, arched handle gives a firm grip for safe use and puts less strain on your wrist. The slicer is dishwasher safe. Made in Japan.
