This stainless steel tempura frying pot is part of Wahei Freiz's Tsubamesan series, made in Tsubame, Niigata, an area with a long history of metalworking that grew into Japan's leading houseware production region.

Stainless steel makes the pot easier to handle than a traditional iron frying pot, while still holding heat well for crisp, evenly fried tempura. A built-in spout makes it easy to pour off used oil, and the stainless steel resists rust and is simple to maintain.

Wash it with regular dish soap like any other pot or pan, then dry it thoroughly before the next use. The pot works on gas stoves as well as induction (IH) cooktops, holds 2.1 L (2.2 qt), and measures 25.5 x 20.5 x 10.5 cm (10 x 8.1 x 4.1 in).
