This tamagoyaki pan from Kyoto Katsugu is used for making Japanese rolled omelette and shares the same iron body as the brand's other pans. Its hard-tempered surface finish means it does not require the traditional pre-seasoning steps of dry heating and oiling before first use.
As it is used more, oil works into the surface and food releases more easily, so the pan becomes easier to use the longer it is owned. The side walls are shaved down to cut weight while keeping the strength needed for cooking, making it noticeably lighter than non-spun iron pans.
The handle is oak, the same hard, moisture resistant wood used for tool handles and drumsticks. This pan has a brim-full capacity of 750 ml (25.4 fl oz) and a bottom thickness of 1.6 mm (0.1 in), and it weighs 680 g (24 oz).
