This carbon steel stir-fry pan is designed for high-heat cooking, giving stir-fried vegetables a crisp texture instead of turning watery. Unlike fluorine-coated non-stick pans, it will not peel over time, and with simple care it can be used for years, darkening and developing more flavor the more it is used.
To care for the pan, wash away any residue with hot or warm water after use (a scrub brush is recommended), dry it off, and heat it briefly on the stove to fully evaporate any remaining moisture. Storing it with a thin coat of oil helps prevent rust.
The pan measures about 48.5 x 28.5 x 15 cm (19.1 x 11.2 x 5.9 in) and weighs about 1.3 kg (2.8 lb). It is made of carbon steel and is compatible with induction (IH) cooktops at 100-200V. Made in Japan.
