This Iron Fried Egg Frying Pan from Wahei Freiz is part of a line of iron frying pans. Cooking at high heat, an iron pan gives stir-fried vegetables a crisp texture instead of turning watery, and because there is no fluorine coating to wear off, the pan can be used for a long time with simple care.
To care for it, wash off residue with hot or warm water after use (a scrub brush is recommended), then dry it completely over heat so no moisture remains, and store it with a thin coat of oil to help prevent rust. With continued use, the iron darkens and develops more flavor over time.
The pan is compatible with induction (IH) cooktops in the 100 to 200V range, measures about 16.5 x 14.2 x 9.5 cm (6.5 x 5.6 x 3.7 in), and weighs 460 g (16.2 oz). It is made in Japan.
