This square deep fryer pot is part of Wahei Freiz's Pocofritto series, designed to make frying easier and less messy using a smaller amount of oil. It is induction (IH) compatible. The square shape lets it stand upright next to other pans on the stove without bumping into them, and oil can be poured straight from a corner of the pot into an oil pot or similar container for easy transfer.
This wide size is 2 cm (0.8 in) wider than the regular size, giving extra room for larger ingredients such as big shrimp or pork cutlets, making it suited to family-size batches. It comes with a square tray that doubles as a lid and a draining rack, so excess oil drains off fried food; the tray can also go into a toaster for reheating, and when not in use it flips over to become the lid, with the rack storing inside. A built-in thermometer lets you check the oil temperature at a glance.
