This julienne slicer is part of Shimomura Kogyo's Ajiwai Shokubo ECO series, designed with the future of the natural environment in mind. The resin body blends in plant-based biomass plastic made from molasses, a byproduct left over after sugar is extracted from sugarcane, replacing some petroleum-based plastic and helping reduce carbon dioxide emissions.

It cuts julienne strips with a pleasant thickness that keeps the texture of the vegetable intact, and the cutting part is made of 18-8 stainless steel for durability. It is well suited to shaving vegetables sasagaki-style or preparing ingredients for kinpira dishes. The slicer is dishwasher safe.

It measures 27 x 9 x 1.2 cm (10.6 x 3.5 x 0.5 in) and weighs about 78 g (2.8 oz / 0.17 lb). Made in Japan.
